Easy One Pot Recipes For The Weekend

Well, we’ve got some easy one pot recipes for you to try, over the weekend, for the satisfaction of good home-cooked food without the fuss.

Popularized by Yoshinoya’s signature beef bowl, Gyudon is surprisingly easy to prepare for something so dang delicious.

Ingredients Needed

- thinly sliced beef - medium-sized onions - scallions - pickled ginger (beni shoga) - egg(s) - dashi stock - soy Sauce - mirin - sugar - rice

Other Things You Need a skillet

Time Needed 20 minutes First of all, it’s important to select the right kind of beef for gyudon. You’ll want thinly sliced beef that’s marked “for hot pot” or “shabu shabu”. It should look like something like this:

Step 1: Chop the onions into strips, like this.

Step 2: Chop the scallions.

Step 3: Heat up the oil in the skillet in medium to high heat. When hot, add in the onions and stir, cooking until tender.

Step 4: Add the beef and push it around the skillet from time to time until it’s lightly browned.

Step 5: Add the mirin, soy sauce and stock. Take note of when it starts to simmer because you’ll need to keep cooking for up to 10 minutes, for the reduction of the stock to take place.

Step 6: Add some beaten eggs to the skillet just before serving so they can cook. Tip: cover the skillet if you want them to cook faster.

Pour from the skillet and serve! Garnish with the chopped onions and pickled ginger, if you like. Some people also like to have their gyudon with toasted sesame seeds and a dash of chili oil. It’s up to you!

Kimchi Fried Rice

Awesome comfort food and a great dish to whip up when you need to get rid of any leftover bits. For this recipe, let’s assume you have some leftover mushrooms and carrots. You can also substitute this with meat.

Gochujang, which is Korean chili paste, is often added to Kimchi Fried Rice. But you don’t actually need it if your kimchi has enough kimchi juice! A good thing to know is that the longer your kimchi has been fermented, the more juice. That's the liquid at the bottom of the jar.

Ingredients Needed - kimchi - kimchi juice - eggs - minced garlic - roasted seaweed - sliced mushrooms - chopped carrots - roasted sesame seeds - vegetable oil Other things you need A pan, or a wok

Step One: Set heat to medium high and warm up the wok. Once hot, add in vegetable oil.

Step Two: Add in minced garlic and stir.

Step Three: Add in kimchi and stir.

Step Four: Add in mushrooms and carrots. The cooking time with vary with the thickness of the carrots. The thinner you slice them, the less time you need. Cook until the mushrooms are tender, stirring constantly.

Step Five: Add in kimchi juice and rice. Mix well.

Step Six: Add in beaten eggs and mix them in! Or if you prefer, you can fry some eggs up separately and then serve them on top.

Step Seven: Remove from heat and serve with roasted seaweed strips on top and roasted sesame seeds.

Total Time Needed: 15 minutes

Indian Lentil Stew

I’m a big fan of Indian food because of the sheer flavour their vegetable dishes pack. Here is a simple recipe for lentil stew, which goes really well with either rice or bread.

Ingredients needed - red or yellow lentils - a large onion - some garlic - curry powder - ground cumin - ground turmeric - salt - cilantro leaves - garam masala - vegetable or chicken stock - diced tomatoes - ghee Other things you need

Step One: Heat up your soup pot. When hot, put in some ghee.

Step Two: Add in onions and stir. Sauté until the onions are translucent.

Step Three: Add in garlic, sauté.

Step Four: Next, we need to add in the ground turmeric, ground cumin, salt and curry powder. Mix it up!

Step Five: This is when the lentils come in. Have you rinsed them under water yet? If the answer is yes, add them in together with the garam masala, stock and diced tomatoes.

Step Six: Bring the mixture to a boil and then, let it simmer until the lentils are tender.

Step Seven: Remove from heat and pour over rice! Serve with cilantro leaves on top.

Total Time Needed: 20 – 30 minutes.
